Staying at the Tiara Château Hotel Mont Royal in Chantilly is promise of change of scenery. Nestled in a green setting, like a jewel in its opened box, the property opens its door on an elegant warm atmosphere stepped with history.
In a setting made of Versailles parquet flooring, moldings, frescoes and crystal chandeliers, the Opera restaurant is a theater enhancing a refined French cuisine. Beyond of the à la carte dishes, a Tasting menu is suggested. This menu boldly evolves in line with seasons and Chef’s inspirations.
During our stay at the Tiara Mont Royal, we were tempted by this Tasting menu, guided with confidence through the seven dishes suggested : two pre-starters, a starter, two main dishes, a pre-dessert and a dessert.
In introduction to this festival of flavors : a fine casserole of mussels and a marvelous red tuna carpaccio with sesame seeds and flowers. We then discovered a home-made foie gras with julienne and rhubarb overseen by a perfect triangle of nougatine.
In main dishes, we savored with delight a four baking meager served with a spinach and parmesan papillotte topped by a shellfish melted with delicate fruits and flowers followed by an Armorican-style beef with oyster carpaccio, truffle strip, pan-fried foie gras and fine beans puree.
To softly invite dessert at the table, a green tomato ice cream lying on a beetroot and mangoes bed surprised us with its freshness. Last but not least the rum baba presented with a light and tasteful Chantilly cream ends in beauty this royal menu. The rum baba is one of the specialties of the restaurant : a must taste!
As you might have understood, we have been charmed by our experience of the Tasting Menu for the offered savors, the elegance of the setting and the kindness of the Tiara Mont Royal restaurant staff. The attentive and smiling service let you with the feeling of having spent an unusual evening in La Vie de Château.
