During our recent stay at the Majestic, we took the opportunity to be there to enjoy the Fouquet’s Cannes restaurant. The first night, it was the launch of the new menu prepared in collaboration of Pierre Gagnaire. If you don’t know Pierre Gagnaire, he is a French renowned Chef leading 11 restaurants that have overall received 13 star at the Michelin Guide.
The Lucien Barrière group who owns the Fouquet’s brasseries has established a long term partnership with Pierre Gagnaire to revisit all the menus. The goal is to keep the classics that made the success of the Fouquet’s concept while making them evolve with Pierre Gagnaire touch. The Fouquet’s Cannes was the first to benefit from this collaboration with the new menu set after few months of work. The others Fouquet’s in Paris, Marrakech and Toulouse will have their new menu ready in 2015.
So let’s talk about the Fouquet’s at the Barrière Majestic in Cannes. The restaurant is located between the swimming pool and the bar. You have the option to seat outside or inside depending on the weather and your preference. We decided to eat outside during both evenings. The temperature was still good in September to allow that. And if it isn’t, no worries, the staff will kindly lend you a shawl for your comfort : the little thing that makes the difference.
The decoration of the Fouquet’s brasserie is quite singular echoing to the historic Art Deco architecture of the Majestic. It is really felted and luxurious, made of black and red tones. Everybody would feel privileged to seat here.
We were quite pleased with the overall atmosphere. The staff is really friendly and gave us nice advices to make our selection. And then they did all they can to make this dinner a memorable time.
Below, you can see the foie gras roasted with turnips, bitter orange and blackcurrants. The foie gras is a great classic of French cuisine. Roasted foie gras is more complex and requires precise baking and balanced seasoning. This was the case here. The taste was perfect, not too strong and not too sweet. The choice of blackcurrants for the sweet creates a surprising result : just perfect!
We continued our dinner with the grilled lamb chops, herb crumble, sweet garlic paste, eggplant and zucchini roll. It was a good selection as well. Then the eggplant and zucchini are vegetables typical from the south of France that find their right place in this cuisine.
We also tried the Fouquet’s Beef Tartar : minced beef with red tuna, smoked herring, Beaufort cheese, capers topped with foie gras ice cream. It comes with a potato and curcuma puree. A glass of Bloody Mary also accompanies this dish. The beef tartar was excellent, nothing to say about, well executed with high quality products. A part of the originality comes from the foie gras ice cream set on top of it, what a good idea! As a tartar connoisseur, I can affirm that it was the best tartar I’ve ever eaten and the most beautiful I’ve ever seen looking like a jewel with a pearl of foie gras ice cream and gold powder lines! The puree was also really tasty.
For the seafood part, we have tried the Whiting, Tartar sauce with steamed potatoes. The tartar sauce taste was a pure delight and the whiting was really well cooked. I didn’t have any issue with the fish bones.
For the desserts, we enjoyed the Fouquet’s iced parfait with vanilla and raspberry ice cream. It is light and a good choice for the end of the dinner. Some small meringues and fresh raspberry are enhancing its presentation. They are quite delicate.
We also tried the Rum baba, stewed fennel and Granny Smith. This is a must have. It is a pastry classic again revisited a bit. The result is as delicious as beautiful like you may see on the picture.
You can see below the gourmet coffee, a coffee that comes with various small desserts like creme brulee, macaroons, strawberries and an ice cream.
To prolong this delightful moment, you can go to the Champagne Bar next to the Fouquet’s to have a cup of Louise Pommery Champagne with a view over the Cannes Croisette.
The Fouquet’s Cannes is also the place where the breakfast buffet is available for the Majestic hotel customers. You can read more about it in our review of the hotel. It was a fantastic experience. First time, I see a breakfast where Champagne is available at the buffet! So Palace!
